I’ve been told that the inspiration for Nopalito, an offshoot of San Francisco notable Nopa, was born out of the meals that staff members would make for themselves/each other before or after serving for the day. This New York Times Magazine article talks about that and how it gives aspiring chefs, bakers and more the chance to cook tacos or pho or pizza in a place like French Laundry. Really cool to think about. I wonder how much better their meals are than the ones they end up serving…
