Healthy chicken salad open-face sandwich

While trying to decide what to have for dinner tonight that met all the necessary requirements for a week-night dinner (1. tastes delicious 2. can be made from ingredients already in my fridge 3. is easy to make 4. tastes delicious 5. is healthy), I asked my friend for advice. She told me to make spicy chicken salad and eat on whole wheat toast. What? How? I’ll tell you how.

Here’s what you need:

-1 slice of whole wheat brea (or any kind you want)

-1/4 avocado

-spinach (or any kind of lettuce you want)

-2 spoonfuls Greek yogurt (more or less depending on how much you’re making)

-Cholula hot sauce

-1 lime

-handful of cherry tomatoes

-diced onions

-cilantro

-salt and pepper to taste

-chicken (I used pre-cooked grilled chicken from Trader Joe’s, big time saver and quite tasty.)

Step 1: Dice the onion, cilantro, tomatoes and chicken and throw into a bowl.

Step 2: In a separate bowl, mix together the Greek yogurt and Cholula. Add to your preferences – more or less of either to make it more or less spicy. I went for spicy. Didn’t regret it.

Step 3: Combine the chicken and Greek yogurt mixtures in one bowl. Squeeze the lime on top, salt and pepper and mix.

Step 4: Meanwhile, toast your bread. Cut up 1/4 of an avocado and spread it on the toast like butta. Dash some pepper on that baby.

Step 5: Add a thin layer of spinach (or whatever lettuce your heart desires) and then dump the chicken on. Voila.

It’s like rich, creamy spicy chicken goodness. I made some roasted garlic eggplant for on the side, went perfectly. Some sweet potato or real fries would also be delicious. Enjoy!
