Here’s the recipe for the pomegranate guacamole I posted a picture of yesterday. Depending on how much you want to make and what flavors you like — sweet, spicy, etc. — you can really adjust it all to your preferences! This made enough for maybe 5-7 people to snack on. I’ve made a single serving just for myself before and used only one avocado and scaled the rest down as well.
3 avocados, ripe
2 ears of corn
1 & 1/2 limes
1 cup of cherry tomatoes
1 jalapeño (fresh!)
Salt & pepper to taste
1. Mash up the avocados in a large bowl.
2. Cut up all the other ingredients – cut the kernels off the corn, cut the tomatoes in half, dice the mango, cut some pomegranate seeds out, and chop up the jalapeño.
3. Add all ingredients to the avocado.
4. Squeeze the limes in, add salt and pepper, mix it all and taste to see if it’s to your liking!
